Meat Free Monday…

Last Monday Jamie sent me a post about what my boy Paul’s been up to - he started an environmental campaign called “Meat Free Monday” encouraging meat-eaters to take a day off meat.  I’m mostly meat free but I still have intense cravings for certain meaty comfort foods.  A craving for a burger or meatloaf can sometimes put me over the edge and send me indulging in a carnivorous treat.

Monday just happened to be one of those days of meat cravings after a not-so-great day at work.  All I could think about all day long was meatloaf and mashed potatoes - my ultimate comfort food.  But I just couldn’t indulge on the one day Paul asked me not to!  So, I went searching the webs for a great alternative.

You might remember when some friends and I made The ‘Meat’ Mountain. Which was good, but made entirely out of faux meat, which doesn’t always feel so healthy.  I was looking for something less fake.  So I found the best recipe for meatless meatloaf I’ve yet to find, based mostly on lentils.  I added more onion and carrots to give it a bit more texture.  It was great, and completely sufficed my meatloaf and mashed potatoes cravings.  Excuse the crappy iPhone picture, however it would be tough to make meatloaf look pretty even with an incredible camera.
